The past week or so has been amazing. I am thankful for everything in my life. I will admit I have been discouraged by things that happen. Such is life. I haven't cooked as much as I usually do because I've been writing my very first ebook. I got a gig and I love it. I am sent a topic and then I write an ebook about that topic. Everything has to be original, no citations, so there is a lot of research involved. Thankfully, I have 50K in student loans that says...hey, I learned how to research. Also, if you have ever attended University of Phoenix, remember that the tools available while you're in school are available to you for life, for free.
For instance, they have a career path process now that can assist you in building on what you already know and do OR creating a new path for yourself. I was very impressed. It gives you step by step instructions with videos, text, etc to reach everyone in whichever way they learn. I love it!
Speaking of everyone and how we learn. I am learning about The Enneagram. At first I thought "OMG, I'm going to lose my religion." I was relieved to discover that it is a personality typing tool similar to MBTI (Myers-Briggs). You answer several multiple choice questions and it gives you scores on one of nine points of personality. I don't want to go into too much detail because then why would you read the ebook?
Ebook...I should mention this is a service as The Eloquent Ghost and I will not own the rights. However, I hope I can tell you about it in the near future and YOU can read it. It can be used in so many different ways. Ugh. ok. shutting up.
Cleaning, I haven't don't much of that either. Thankfully, Ricco has been home and has helped me while I tie myself down to my laptop and try to make this deadline.
We went to a new park the other day about a 10mins. drive away and it was awesome. The park is gorgeous, has lots of benches all around the play areas and plenty of different things for my littles to do. Evan especially loves the park. He most enjoys meeting every new kid that shows up while we're there. We stay long enough to meet at least two different kids.
I saw this amazing recipe on Facebook tonight. It's seasoned chicken thighs browned, then baked for 20 minutes. Then you set those aside and add mushrooms and bacon and caramelize those. You top it off with heavy cream and simmer for a few minutes. Add your chicken back and voila! I cannot wait to make this and share it on Instagram and Facebook..
Other than that, I'm looking forward to making a Pumpkin Bread with a Compound Butter tomorrow morning for my husband. You can find that on IG and FB as well.
